Human is the richest of the three sakes in the premium range of Kuheiji. It is made with Yamada Nishiki rice, grown by the brewery, in the Kurodasho region of Hyogo Prefecture and it is polished to 45% of its original grain size in the brewery’s own rice processing plant which is designed to polish the rice grains to a predetermined shape to maximise certain rice and umami components reaching the final fermentation stage.

Human opens with delicate aromas of grapefruit, citrus, apple and white peppercorns. Upon swirling in the glass aromas of green prince melon and botanicals are evident. On the palate pear, apple and stone fruit create a medium-sweet marriage characterised by a smooth texture which evolves to a creamy, velvety mouth feel with a delicate acidity bringing brightness to the finish. This sake has one in-bottle pasteurisation, and it should be stored in refrigerated conditions to keep it in good condition. The brewers believe that this sake will stimulate our most human emotions (hence the name for the label) and is accessible to all who claim to be human!
